Keto Granola

This Keto Granola is easy to make and is the perfect sugar free crunchy breakfast or quick snack.

Dry Ingredients

  • 1 cup flaked almonds
  • 1 cup chopped pecans
  • 1 cup shredded desiccated coconut
  • 1 cup toasted coconut flakes
  • 1/2 almond flour or meal
  • 1/4 cup chia seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup Optimal Essentials Vanilla Protein Powder
  • 1/2 cup Stevia
  • 1/4 cup cacao powder
  • 35g hemp seeds
  • 1 tablespoon orange zest
  • 1 tablespoon lemon zest
  • 1 tablespoon cinnamon spice
  • 1/2 tsp Himalayan pink fine salt

Wet Ingredients

  • 1 extra large egg white
  • 1/4 cup coconut oil
  • 15 drops Organic Stevia Sweetener
  • 2 tablespoons water

Method

  • Preheat oven to 150 degrees Celsius
  • Place all ingredients into mixing bowl and combine well
  • Add egg white, coconut oil, liquid stevia and water and mix well until mixture resembles wet, crumbly dough
  • Transfer mixture to lined baking sheet 
  • Bake for 40 minutes, stirring halfway
  • Remove from oven and cool
  • Once at room temp, transfer granola to glass container
  • Serve with your choice of milk, cream or yoghurt
