Banana Blueberry Muffins

A super delicious and healthy treat for you or the kids!  No added  sugar or preservatives. High in protein and fibre, no nasties but still super tasty.   Dr Phil's grand kids absolutely love these when he makes them with NRG2GO for Kids!

Ingredients:
150g ground almond meal
100g plain wholemeal flour or spelt or quinoa
2 tsp of baking powder
4 organic free range eggs
60ml virgin olive oil
2 large bananas
1 tsp ground cinnamon
1 tsp natural vanilla essence
3 tsp of organic stevia
200g fresh or frozen blueberries
1 tablespoon of milk of your choice
1 scoop Healthy Weight or Protein Plus or Immune
OR for a great kids lunch recipe add 2 Tbsp of NRG2GO for kids

Prep:
Pre-heat oven to 170ºC.  Using a blender at high speed combine and mix the ingredients as follows:  banana, eggs, milk, olive oil, cinnamon, vanilla essence, baking powder, slowly add almond meal and flour, Healthy Weight /Protein Plus/EnergyPlus/NRG2GO and stevia.

Blend until a creamy consistency.  Add blueberries and gently mix well.  Spoon the mix into 12 large baking cups (muffin size).  Bake for about 35 minutes until cooked through and golden test by inserting a skewer - it should come out the muffin clean, if it’s still gooey cook a little longer (say 5 minutes) and test again.
 
Allow to cool on cooling tray.  Makes approx 12 large muffins.  Can be stored in freezer.
