Almond, Oat & Quinoa Cookies

A super delicious treat that's easy and quick to make and still healthy.  Perfect to have with a coffee or tea or anytime you like!

Ingredients:
1cup of 5 grain oats
I cup of raw almonds
1/2 cup medjool dates
2 free range eggs 
1/4 cup dark unrefined sugar or 6 teaspoons of stevia
1 tsp of natural vanilla essence
1 tsp baking powder
2 - 4 tsp Healthy Heart or Immune (or both)
 
Topping ingredients:
1/4 cup pure Cacao (or 90% dark chocolate)
1/4 cup dates

Cookies:  
Put all the dry ingredients in a food processor and grind down to a medium mix, not too fine and not too chunky.  Add all the wet ingredients and mix to a dough type mix.  Put in a bowl and pop in fridge for 10 minutes.   Heat oven to 150ºC and line a large tray with baking paper.  Wet hands and roll out dough into small balls, place on tray and spread or squash down to a cookie shape with a fork.   Bake for 10 to 15 minutes or until golden.   Take out oven and allow to cool on a cooling rack.

Topping: 
Prepare frosting by mixing the cacao (or dark chocolate) with the dates in a blender until a smooth paste.  Place in a heat proof dish or bowl and simmer over a saucepan of water that has come off the boil - do not have the bowl in the water but just above, you want to melt it not cook it!
 
Once the biscuits have cooled spread the frosting and store in an airtight container (or for longer in the fridge/freezer).
