Home Made Muesli

A healthy alternative to pre-made store muesli. High in fibre, essential fatty acids, protein and more. Add as little or a lot of what you like.

Ingredients

100g of the following:

Walnuts

Pistachios

Almonds

Pumpkin seeds

Sunflower seeds

Sesame seeds

Grind above ingredients in a processor (not too fine, leave a few chunky bits)

500g six grain oats

1 Tbspn cinnamon

40g natural coconut, shaved

 

Other optional ingredients:

75g goji berries

75g dried cranberries

75g sour dried cherries

75g Pomegranate seeds  

250g Apricots Australian natural dried

Prep

Roughly chop apricots and leave to one side. Mix cinnamon with oats and spread across a large metal tray and toast in oven at 180C for about 10 mins or until nicely golden. Sprinkle nuts and seeds together with oats and cinnamon and lightly toast futher for approx 2 minutes (don't burn).Allow to cool. Once cooled, mix EVERYTHING together and store in an airtight jar.

 

Serve with a dollop of yoghurt, fresh blueberries and milk of your choice (hot or cold).Keeps in airtight jar for months
