Chickpea & Lentil Burgers

Chickpeas are a nutritional powerhouse!  They are great source of protein and combined with a whole grain such as brown rice, become a complete protein.  High in fibre and phytochemicals called saponins, which can act as antioxidants, they may help lower the risk of breast cancer, protect against osteoporosis and minimize hot flushes in post-menopausal women.

Ingredients

1 can lentils

1 can chickpeas

1 cup cooked pumpkin

1 cup cooked zucchini

1 onion, chopped

2 cloves garlic

2 eggs

1 extra egg white

2 cups wholemeal breadcrumbs

Prep

Fry onions and garlic in olive oil until soft.  Place all other ingredients in processor to make a mash.  Add eggs, onions and breadcrumbs.  Form mixture into patties and fry with small amount of olive oil until brown. Serve with brown rice or similar, fish, chicken, salad or anything that takes your fancy!!
