This healthy chocolate mousse tastes fantastic, and no one will guess the healthy ingredients list!
3 large eggs (separated)
3/4 cup plain non-fat greek yoghurt
1/4 cup light brown sugar
2 tablespoons coconut flour
1 1/2 cups sugar free dark chocolate melts (we used Sweet William brand)
Pinch of sea salt
Optimal Essentials chocolate protein powder or Healthy Weight sprinkled on top
Serve with fresh berries or chocolate shavings (optional)
- In a small saucepan, whisk together egg yolks, Greek yoghurt, brown sugar, flour, and sea salt. Place over low heat and cook, stirring constantly, for 3 minutes. Meanwhile, melt your chocolate chips on the stove top or microwave.
- Remove saucepan from heat and whisk in melted chocolate. Set aside to cool.
- In a mixer, whip egg whites to stiff peaks. Slowly add in melted chocolate mixture, folding carefully as to not deflate the egg whites.
- Pour mousse into 8 small shuffle dishes, then refrigerate for at least 2 hours.
