Healthy Berry Oat Pancakes

  • These delicious healthy pancakes are perfect for breakfast or a snack anytime and can be kept in the freezer  to use when you feel like something sweet and filling (and healthy)!!
             Ingredients
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • ⅓ cup honey
    • ¼ cup almond milk
    • 1 tablespoon coconut oil
    • 1 cup berries
    • 1 teaspoon coconut oil, or as needed to cook pancakes on saucepan
    • 1 teaspoon Optimal Essentials Immune powder to replace vanilla flavour (and to make it even healthier!)

     

    Process oats in a blender or food processor until the consistency of flour. Combine ground oats, cinnamon, baking powder, and salt in a bowl.

    Whisk eggs, honey, almond milk, 1 tablespoon coconut oil, and Immune powder together in a separate bowl. Stir oat mixture into egg mixture until batter is well mixed; fold in berries.

    Heat 1 teaspoon coconut oil over medium-high heat. Spoon batter cook until bubbles form and the edges are dry for 3 to 4 minutes. Flip and cook until browned on the other side.
