ANZAC Cookies

A healthy alternative to the well known ANZAC Cookie

Ingredients

1 cup organic rolled oats

1/2 cup spelt flakes rolled

40g  organic desiccated or flaked coconut

1/2 cup flaked or chopped organic almonds (not blanched)

2 1/2 Tbsp virgin olive oil (or macadamia nut oil)

2 Tbsp organic maple syrup

1 tsp vanilla extract

1/2 tsp vanilla bean paste

1 Tbsp water

Prep

Pre heat oven to 150 C

 

Combine oats, coconut and almonds into a food processor and blitz for approx 30sec or so.  Add the oil, maple syrup, vanilla and the water and either mix by hand in a large bowl or process again in the processor. The addition of water will help the cookie mixture stick together - use more if mixture is a bit dry.

 

Line a baking tray with baking paper and formm mixture into small cookies.  Place each one onto the baking paper and flatten down with a fork but make sure you enough room around each cookie.

Place in oven and bake for approx 20 -30 minutes or until golden brown.  When ready transfer each cookie to a cooling tray and allow to cool completely before eating.

 

Enjoy with a coffee or tea or anytime you like.

 

Can be stored in an airtight container for 7 days.
