Cookies:  Put all the dry ingredients in a food processor and grind down to a medium mix, not too fine and not too chunky.  Add all the wet ingredients and mix to a dough type mix.  Put in a bowl and pop in fridge for 10 minutes.   Heat oven to 150ºC and line a large tray with baking paper.  Wet hands and roll out dough into small balls, place on tray and spread or squash down to a cookie shape with a fork.   Bake for 10 to 15 minutes or until golden.   Take out oven and allow to cool on a cooling rack.

Topping:  Prepare frosting by mixing the cacao (or dark chocolate) with the dates in a blender until a smooth paste.  Place in a heat proof dish or bowl and simmer over a saucepan of water that has come off the boil - do not have the bowl in the water but just above, you want to melt it not cook it!

Once the biscuits have cooled spread the frosting and that's it.
